Char Siu with Minimal Carbon Footprint

Using the oven apparently is the least efficient way of cooking - more than 80% of the energy is lost - but it warms the hearth nicely.

Here is a short cut

Use pork neck, cut along grain into strips. Marinade with a sugar/salt/pepper/garlic mix. Leave for as long as you can.

Steam till just cooked. Leave to dry out a little.

Reduce juice to thick. Adding honey, thick soy, hoisin, whatever does help.

Add the pork strips back to this thickened sauce and then grill till the tips burn. Brush with remaining thickened syrup to finish.

Overall use of oven - about 10 minutes for the grill.
